About Howard’s Folly
Howard’s Folly, a boutique wine producer nestled in the Alentejo region of Portugal, is the brainchild of Chief Winemaker David Baverstock and entrepreneur Howard Bilton. This dynamic duo shares a passion for unlocking the best of Portugal’s grape varietals with innovation, passion, and a mission-driven approach.
David Baverstock, an Australian by nationality and a long-time Portuguese resident, is the undoubted superstar of Portuguese wine. Having been awarded ‘Winemaker of the Year’ an unprecedented three times, Baverstock has revolutionised the Portuguese wine industry by introducing new world techniques to old world materials.
On the evening of October 26th, Howard Bilton, the Yorkshire-born entrepreneur, will grace our Supper Club, personally presenting and explaining the exquisite wines. Our very special Howard’s Folly Supper Club menu promises to transport you on a tantalising journey through the rustic flavours of Yorkshire’s autumnal bounty, with each course a carefully crafted masterpiece echoing the essence of the local countryside.
On the evening of October 26th, diners can expect to enjoy:
First Course: Smoked Mackerel with ‘Vol-au-Vent’, Beetroot & Horseradish Chutney
Picture a delicate ‘Vol-au-Vent’ generously topped with smoked mackerel, accompanied by the earthy notes of beetroot and the kick of horseradish chutney. This delicious starter sets the tone for what promises to be a magical evening.
Second Course: Pressing of Yorkshire Ham Knuckle & Guinea Fowl with Peas Pudding, Grain Mustard, and Quail Egg
A celebration of Yorkshire’s rich culinary heritage, this course combines the succulence of Yorkshire Ham Knuckle and the delicate flavours of Guinea Fowl. The quail egg adds a touch of elegance, creating a harmonious dish that pays homage to the region’s traditional fare.
Game Season Nod: Yorkshire Moors Shot Partridge Risotto with Wild Mushrooms, Wilted Garden Kale, Braised Chestnuts, and Aged Parmesan
As we step into game season, this course captures the essence of Yorkshire’s moors. The shot partridge takes centre stage, surrounded by a support act of wild mushrooms, garden kale, and the richness of braised chestnuts and aged Parmesan.
Fish Course: Brown Butter Poached Halibut Loin with Foraged Girolles, Marsh Samphire, Melting Potted Shrimps, and English Sparkling Wine Velouté
Indulge in the ocean’s bounty with a meticulously crafted fish course. The halibut loin, poached in brown butter, is accompanied by the delicate flavours of foraged girolles, marsh samphire, and the luxurious touch of melting potted shrimps. The English Sparkling Wine Velouté adds a delightful effervescence to the dish.
Penultimate Course: 8hr Braised Ox Cheek with Autumn Truffle Creamed Potatoes, Beef Fat Carrot, and ‘Bourguignon’ Juices
For a taste of sublime richness, the 8hr Braised Ox Cheek will not disappoint. Accompanied by autumn truffle creamed potatoes, beef fat carrot, and ‘Bourguignon’ juices, this course is a celebration of hearty flavours and slow-cooked perfection.
Final Course – Dessert: Marathon Chocolate Box with Miso Caramel, Dark Chocolate Mousse, Nougat, and Peanut Chip Ice Cream
