From The Farm To The Table: Our Longhorn Steers Beef
Here at the Star Inn The City we use the best quality, local produce to craft exquisite seasonal dishes all-year-round.
Since opening our doors in 2013 we have been committed to bringing guests ‘a little taste of the countryside in the city’ and our passionate chefs work tirelessly to scour the length and breadth of the Yorkshire region in search of the very best ingredients.
Working with local farms and suppliers ensures we can serve diners exceptional produce that has been grown or reared for optimum taste. Sourcing produce from the surrounding region also helps local communities to thrive and supports our environmentally friendly objectives by reducing the requirement for long-distance transport.
Earlier this year, our head chefs Jack and Ian visited a local farm on a mission to find the highest quality beef for our menus. In this focus piece we tell you a little bit about their journey and how our beef came ‘from the farm to the table’.
Our Beef: Longhorn Steers
Longhorn steers are farmed 600 feet above sea level on the edge of the Yorkshire Wolds. They are a pedigree native breed with a leanness of body that is unrivalled, making them an ideal candidate for top quality beef production.
When our chefs visited the farm, their aim was to understand the breed in more detail and they learnt how the Longhorn Steers are reared extensively on grass and finished on the farm’s own home-grown barley, which helps give the beef an exquisite flavour and tenderness.
Our chefs even hand picked each steer for our restaurant and in true dedication to their craft both Jack and Ian teamed up with a local butcher to understand the delicate process of butchering and preparing the steer for use in The Star Inn The City kitchen.
Since introducing our handpicked Longhorn beef to our menus, the reaction and feedback from our guests has been incredible; diners have noted that the beef has a marvellous moisture and juiciness, alongside a firm but giving texture.
